Food contains a vast and changing mix of natural compounds, ingredients, contaminants and substances from production, processing and packaging. Traditional databases cover only a small part of this foodome, leaving much of the chemical complexity uncharacterised. This topic funds an Innovation Action that uses artificial intelligence to make high-throughput foodomics data more useful.

Developing and testing validated AI algorithms that interpret, annotate and infer compounds in high-throughput foodomics data from methods such as untargeted mass spectrometry and nuclear magnetic resonance. The action builds AI-ready foodome datasets and a European food exposome research network linking academia, infrastructure, industry, start-ups and SMEs, with results reaching TRL 7 from a starting point at TRL 5.
